My friend and I were planning to travel to America but it was such a hassle getting her a visa we decided to try somewhere else! I feel sorry for her, shes been in England for 6 years, has a full time job and is properly settled over here but just to apply for one its 150 dollars and an interrogation at the US embassy. Polish citizen holding an e-passport can also be granted visa free stay in Canada. So you probably could also take a several day stop in Canada into consideration before you proceed on to Mexico.
